Backstabs in Dark Souls 3 were finnicky beasts - they were seriously unpredictable in PvP combat, and would often see someone backstab another player when they were facing their opponent head-on. You can easily backstab in Dark Souls 3 by moving behind a normal enemy and tapping the light attack button. For bosses, you will have to stagger them first, and then you can backstab them if they are prone to it. The dagger has the best critical output of any weapon (at +10) and it should be an elemental infusion because criticals ignore absortions and these get higher AR. Usually chaos/fire/crystal/lightning depending on your stats. Also I'm assuming you're using the hornet ring, in this case dont use dark/deep cuz its bugged.
